Coregonus lavaretus is a species of freshwater whitefish.
Lavarets are one of the most uncommon fish to catch (depending on your area). If you set up a net in a rapids tile near the ocean you are much more likely to catch lavarets. A lavaret (being one of the heaviest large fish) is one of the best fish to smoke/dry/salt.
Although they are larger than salmon and trout they are much more common to catch as trout and salmon are the most uncommon fish to catch.
