Sand mushrooms start to sprout in Fallow month (June) and grow for 60 days so they can be picked from Harvest (August) until Dirt (October) when they start to wither.
They are deadly to consume in any form, but if you anyhow decide to eat one and wish to survive, find a sage or a shaman, ask them to heal you, and pray.
In real world
Sand mushroom's real world counterpart is probably Amanita Virosa or destroying angel, a common deadly poisonous mushroom.
