I just got told off for chopping down trees in a grove - technically saplings.
Since when are groves owned? Can I still safely get bark or is that forbidden as well?

What matters is where you're standing. If you're in the village, and the tree is in the grove, the villagers tell you off. If you're in the grove and the tree is in the village, they don't.

I could have sworn I was some tiles into the Grove - given the trees around me - but I'll assume otherwise.

Well, it could be a bug as well.
You can check from msglog.txt. You'll see a line like:
(143270):16gg:[#]{011D021B} | Timbercraft option: Fell a tree
{011D021B} is the address of the tile that I was in when I cut that tree down. You can compare it to a nearby line where you're sure in the village, something like
(000000):66g7:[Y]{00EE01AA} | You shake the needles from your shoulders and come forward among the people. You are entering a seal-tribe village...
In my case these are completely different days and places, I just searched through my msglog.txt for examples but if you're in a grove next to a village, then it should be only one number different, like {01230456} for cutting the tree and {01220456} or {01220457}for being in the village, and if they got mad at you in that case then I think it's a bug.

Ok, now I know for a fact that, perhaps not groves, but Pastures are considered part of their property.
Farms, sure, but pastures?
I'll update you if anything like this happens again.
PostScript: Of note I have the BAC mod installed. But I don't know if that would influence this or not...

Yes, pastures are considered to be village property.
It makes some kind of sense that the village's grazing grounds are considered to be owned by them. It's not a BAC thing.

The following is purely opinion and, again in my opinion, should have no influence on the development of the game... However, "grazing" lands being protected for grazing food (i.e. grasses, etc) makes sense. I was picking mushrooms.
If, for the sake of argument, Groves were considered protected, then it would make sense for them to be protected for the use of wood, fields (farms) for food, and pastures for grasses.
Unless, and here's the main caveat that makes me say do not allow the previous _opinion_ to influsence the development of the game, *everything* is 'protected' for *everything.*
In any case, I'll just have to be careful to pick mushrooms when it's night and people are less likely to be wandering around...
